This is the recipe for turkey dressing from my late father in-law, Dr.Theodore Mason. We have great memories of my eldest son and his grand-pa preparing the dressing, together, every Thanksgiving morning.
Dr. Masons' Turkey Dressing
3-4 stalks of celery
1 green pepper, chopped
1 red pepper, chopped
2 large onions, chopped
1 pint oysters (optional)
2 lbs.pork sausage ( mild ) (you can "kick" it up later)
2 packages of stuffing mix ( Pepperidge Farm..one pkg.regular stuffing mix, one pkg.cornbread stuffing mix..enough for turkey and then some)
2 quarts chicken broth
1 stick butter ( plus a couple of tablespoons for the vegetables)
Seasonings; sage, thyme, rosemary, oregano, pepper&salt.. (taste to your liking )
------ Saute chopped vegges in butter and a bit of vegetable oil
In separate pan, brown sausage and chopped oysters
In a sauce pan, warm 1 quart of the broth with one stick of the butter
Place dry stuffing mix in a very large bowl
(when vegetables are done add to the stuffing mix)
Stir ..add spices of choice...Dr.Mason used sage, thyme, salt and pepper
Add liquid a bit at a time so you don't make the dressing too wet. You may not need the whole quart..or you may need a bit more
Pack turkey with stuffing mix ...be certain to not over-pack
