Here is a Thanksgiving yam recipe with a John Auble banana twist.
Ingredients: 4 lbs sweet potatoes
1 large banana
1 cup packed brown sugar
1/2 cup butter, softened
1/2 tsp salt
1/2 tsp Chinese Five Spice
2 tsp grated orange rind
2 tsp grated lemon rind
Preheat oven to 350 degrees
Bake yams for one hour (for fuller flavor) or, cook peeled, sliced yams in boiling water for 30 minutes or until tender.
Peel baked yams and mash with sliced banana, by hand or with electric mixer (like you would with mashed potatoes)
Add remaining ingredients and beat until fluffy.
If mixture seems dry, add some water.
Put in greased 2 quart casserole and bake 30 minutes.
Serve hot
